We just moved into our new home a month ago. I went to get my loaf pans to make my delicious Banana Bread and I just couldn’t find them anywhere. I have no idea where they ran off to. I do have a few boxes left but I looked in them and no bread pans. I was like what in the world am I going to do now. I have 3 perfectly riped bananas and I don’t want them to go to waste… Then I got the the perfect idea. Why not make them into muffins. I have never done this before and thought it would be cool to see if they would turn out the same. To my surprise they came out perfectly. They were moist and fluffy and tasted oh so yummy. You will absolutely love this recipe. It’s super easy and I bet you have most ingredients if not all right in your kitchen

Ingredients:

  • 1/2 cup butter, softened
  • 1 – 1/2 cup sugar
  • 2 tsp vanilla
  • 2 eggs
  • 1 tsp baking soda
  • 2 cups flour
  • 3 ripe bananas, mashed
  • 1 tsp salt
  • 1 cup sour cream
  • 3/4 cup chopped pecans or walnuts (optional)

Directions:

1: Preheat oven to 375

2: Cream together in a large bowl butter, sugar and vanilla

3: Add eggs, sour cream and mashed bananas one at a time

4: Sift together flour, soda and salt

5: Then add to creamed mixture

6: Beat with mixer on high until fully mixed

7: Stir in chopped nuts (optional)

8: Place cupcake wrappers in normal sized cupcake pan

9: Fill the cupcake liners with batter (about 2/3 the way full)

10: Bake at 375 for 18 – 25 mins. (Check with toothpick at 18 minutes to see if finished)

11: Let cool for about 10 minutes before eating… well try to at least

Makes about 24 muffins 🙂
