Banana Muffins Recipe
Serves: 24
 
Ingredients
  • ½ cup butter, softened
  • 1 - ½ cup sugar
  • 2 tsp vanilla
  • 2 eggs
  • 1 tsp baking soda
  • 2 cups flour
  • 3 ripe bananas, mashed
  • 1 tsp salt
  • 1 cup sour cream
  • ¾ cup chopped pecans or walnuts (optional)
Instructions
  1. Preheat oven to 375
  2. Cream together in a large bowl butter, sugar and vanilla
  3. Add eggs, sour cream and mashed bananas one at a time
  4. Sift together flour, soda and salt
  5. Then add to creamed mixture
  6. Beat with mixer on high until fully mixed
  7. Stir in chopped nuts (optional)
  8. Place cupcake wrappers in normal sized cupcake pan
  9. Fill the cupcake liners with batter (about ⅔ the way full)
  10. Bake at 375 for 18 - 25 mins. (Check with toothpick at 18 minutes to see if finished)
  11. Let cool for about 10 minutes before eating... well try to at least
  12. Makes about 24 muffins :)
